Harvest Moon | White Tea

A late autumnal tea and it tastes like it. An airy and voluminous mouthfeel with the cup character of snap peas and a leaf pile. Light, but not weak.

A “Bai Mu Dan” (White Peony) style tea produced October 8-10, 2022 by Mr. Huang Hai Qiang in Fuding City. It’s a 1 bud, 2-3 leaf pick of the Fuding Big Hair cultivar growing at approximately 1,300 feet. It’s classic white tea production - picking, withering, and drying. The Chinese farming calendar is divided into 24 nodes (“Jie Qi” in pinyin). This tea was harvested during the “Hanlu” node (“cold dew” in English), which is approaching the last possible days to harvest and process tea. These teas are known for their calm presence and clean sweetness.

Ingredients: white tea

Steeping Instructions

Steep 4 grams | 10-12 oz water | 195°F | 3 min. 

*4 grams of this tea can be a little tight in some filters, but once it softens from steeping it will fit just fine.

Traditional Steeping - Use 6 grams of tea in a 150ml teapot or gaiwan and boiling water:

  • 1st Steep – 25 seconds
  • 2nd Steep – 20 seconds
  • 3rd steep – 40 seconds
  • 4th steep – 90 seconds
  • 5th steep – 3 minutes

Number of Cups

2 oz makes 19 cups, 4 oz makes 38 cups
